The Kolovi olive variety, found exclusively in Lesvos, is known for its elegant and refined profile. The olives are hand-picked in November

Olives are carefully hand-picked, and we keep only those in perfect condition. We collect them in traditional sacks, just like our ancestors did.We begin harvesting olives in early November through early December to ensure they’re fresh, rich in aroma, and packed with polyphenols and antioxidants at their peak.

Immediate production after harvest

The production of our extra virgin olive oil begins immediately after the olives are harvested. This is because the fresher the olives, the juicier they are — preserving all their antioxidant properties and naturally high polyphenol content.

Only with mechanical methods and cold water

Cold-extracted below 27°C

The olives are first gently rinsed with cold water and then slowly malaxed to preserve their juice and freshness. The resulting paste is then separated using cold water — always below 27°C — to extract the golden-green extra virgin olive oil. This is how we capture the purest expression of the olive, without compromising its vibrant flavor and nutritional integrity.

Strict laboratory testing

Each batch undergoes lab testing upon production. If it meets our strict quality criteria, it is then stored in dedicated stainless steel tanks within climate-controlled rooms to ensure a consistently cool environment.

Attention! When we bottle the olive oil for shipment to our international warehouses, we run a fresh lab analysis. This means the analysis you see for the product you’re interested in reflects its exact quality on the day it was bottled!

Nikos’ groves lie on the sun-bathed slopes near Plomari. He specializes in the rare Kolovi variety, producing oils with floral notes and elegant structure. Each bottle reflects the island’s spirit.

Manolis Sfakianakis

Producer – Venerato, Heraklion (Crete)

In the hills near Venerato, Manolis cultivates centuries-old Koroneiki trees. His knowledge runs deep — blending old techniques with care for soil and sustainability. Every harvest is his pride.

Stathis Kargas

Producer – Akrasi, Lesvos

Giorgos Kastrinakis
