The Power of Polyphenols: Why Extra Virgin Means Extra Good
What polyphenols in extra virgin olive oil are, why you can taste them as a peppery finish, why they fade with time, and how to read the number on a lab report.
Polyphenols are natural compounds the olive tree produces to defend its fruit. When the olives are pressed gently and quickly enough, those compounds survive into the oil — and they are the single biggest reason a real extra virgin is worth more than a refined one.
You can taste them
That peppery catch at the back of the throat, and the clean bitterness across the tongue, are polyphenols announcing themselves. People new to high-phenolic oil sometimes mistake this for a fault. It is the opposite: a completely soft, neutral oil usually means the polyphenols are long gone.
What the EU allows to be said
In the EU, health claims for food are permitted only in the exact wording authorised by law. For olive oil there is one: “Olive oil polyphenols contribute to the protection of blood lipids from oxidative stress.” It may only be used for an oil containing at least 5 mg of hydroxytyrosol and its derivatives per 20 g, and with the information that the beneficial effect is obtained with a daily intake of 20 g of olive oil. That is precisely why the number on a lab report is more useful than any adjective on a label.
They fade — so freshness is the whole game
Phenolic content is highest at pressing and declines with time, heat, light and oxygen. Early harvest, immediate pressing, nitrogen storage and light-proof packaging are not marketing steps; each one is a way of losing fewer of them between the tree and your kitchen.
How to read a number
An oil is often described as high-phenolic above roughly 250 mg/kg. Our Crete harvest tests above 650 mg/kg and our Lesvos above 350 mg/kg total polyphenols, published per batch. If a producer cannot tell you the figure for the bottle in your hand, that itself is information.
The short version: buy fresh, buy tested, and let the pepper at the back of your throat tell you the rest.
